Grapes: 100% Grillo
Zone of production: West Sicily
Vinification and Ageing: The grapes are harvested in boxes until they reach their best ripeness. De-stemmed and cold maceration of the outer skin with the must (4° C).
The grapes are pressed softly and very slowly fermented at a low temperature.
The foam is taken applying the Charmat method.
Description: The color appears as a straw yellow with a very fine and persistent perlage.
It has a fragrant perfume and a variety of nested aromatic scents with a fruity background. It has a velvety taste with a refreshing vein to which elegant floral notes are added.
How to serve: In half-flûte glasses, it must be uncorked at the time of consumption. Excellent at 6-8 ° C.
