GRAPES: 100% Catarratto produced organically and sulphite free. The vines are Guyot pruned, planted espalier with a density of 5000 vines per hectare.
VINIFICATION AND FINING: The grapes are harvested by hand in 14 kg crates with a careful selection of the best, both on the plant and in the cellar, between mid and late September. The must is softly- pressed in total absence of oxygen. It is then subjected to cryomaceration at a controlled temperature of 10 °C for 10-12 hours in stainless steel tanks where it subsequently aged “sur-lie” for about 3-4 months.
ALCOHOL CONTENT: 13 % by vol.
WINE DESCRIPTION: Straw yellow colour, with slight more intense shades, clean and fresh, with a marked floral, vanilla and white fruit character. Serving temperature 11° C.
