GRAPES: 75% Nero d’Avola DOC and 25% Cabernet Sauvignon DOC, grown in quite sandy soil near Partinico at about 350 meters above sea level. The vines are Guyot pruned, planted espalier with a density of 5000 vines per hectare.
VINIFICATION AND FINING: The grapes are hand picked in 14 kg crates around mid-September. They are then crushed and destemmed and the must is fermented at controlled temperature in stainless steel tanks with frequent “pumping-over” and delestages for about 8-10 days; the wine is then aged for about 6 months in stainless steel tanks.
ALCOHOL CONTENT: 14 % by vol.
WINE DESCRIPTION: The nose reveals notes of blackberry, ripe cherry and bell pepper; on the palate it is fresh, luscious and velvety with pleasant spicy notes towards the end. Serve at a temperature between 16 and 18 °C.
